Vegetable Cake (Mücver)

OK, this is a dish from Turkish cuisine. It's known as "mücver", but I don't know what would be the English translation. Let's call it a Vegetable Cake (a salty cake, though). I wanted to share the recipe especially because it's super healthy and light! Check out the ingredients, if you don't believe! I usually make it as the main dish or as a side dish to eat with some tea when I have guests.  Here's the recipe:



Ingredients:

- 1 carrot
- 1 potato
- 1 small onion
- 1 leek
- 3-4 tablespoon chopped parsley
- 3-4 scallions (sliced)
- 3-4 tablespoon chopped spinach
- 2 tablespoon olive oil
- 2 eggs
- 1 tablespoon feta cheese (or 2-3 tablespoon plain yogurt)
- 3 tablespoon all purpose flour
- 1 teaspoon baking powder
- salt and pepper to taste

How to make:

1- Heat the oven to 375F
2- Grate the carrot, potato and onion and put aside separately.
3- Chop the leek
4- Heat the olive oil in a large skillet and add the onions
5- Toss the chopped leek, carrot and potato respectively (Don't cook too much. Only couple minutes will be enough)
6- Set aside the skillet and let the vegetable mix cool.
7- When they're cooled, transfer the vegetable mix to a large bowl.
8- To the bowl, add the chopped scallions, chopped parsley, feta cheese, eggs, flour, baking powder, salt and pepper and mix them all well.
9- Take the mix to a greased oven pan and make the top flat with the help of a spoon.
10- Bake for about 30 min. or until the top is golden brown.
